PENGURANGAN KADAR MINYAK PADA USAHA KECIL KERIPIK DENGAN PENERAPAN TEKNOLOGI MESIN PENIRIS

Abstract


One of the problems in the production of dumpling chips is that there is still a lot of oil in the frying product that is only drained using a simple sieve. This can cause a decrease in quality, so it is very necessary for technology to reduce the oil from the frying product. The main components of a drainer consist of an iron frame as a holder, an electric motor as a drive, and a tubular drainer in a tubular shape. The method begins with the provision of tools and materials, the design and manufacture of tools, demonstration of tools and granting of slicing machines to partners. The results of this activity show that the drainer is proven to be able to improve the quality of chips and able to carry out a frying process with a larger capacity of around 6 kg with much better results. Chips appear more yellow and the color does not look brownish. The quality is also evident from the amount of oil that can be drained. Before the introduction of draining machine technology, the oil content drained was only 20 ml / kg. After the existence of a drainer, it is able to drain the oil content of 67 ml / kg.
